    Title: Easy Fried Rice
    Categories: Rice, Vegetables, Poultry, Pork, Herbs
    Yield: 4 servings

    2 lg Eggs; beaten
    1/4 ts Salt
    3 tb Oil; divided
    4 c Cooked rice
    1 1/2 c Frozen stir-fry vegetable
    - blend
    1/2 c Sliced green onions
    1 cl Garlic; minced
    1 c Diced, cooked chicken
    3 tb Soy sauce
    1 tb Chicken broth
    1/2 ts Pepper
    1/4 ts Ground ginger
    4 sl Bacon; cooked, crumbled

    Combine eggs and salt. In a large skillet or wok over
    medium heat, scramble eggs in 1 teaspoon oil, breaking
    eggs into small pieces. Remove from skillet and set
    aside.

    Add remaining 2 tablespoons plus 2 teaspoons oil to
    skillet. Stir-fry rice over medium-high heat for 5
    minutes. Add vegetables, onions and garlic; stir-fry for
    5 minutes. Add chicken; stir-fry until heated through,
    3-5 minutes. Combine soy sauce, broth, pepper and
    ginger. Add to rice; stir to coat. Add bacon and eggs;
    heat through.

    Title: Mexican Pinwheels
    Categories: Cheese, Vegetables, Sauces, Chilies, Breads
    Yield: 5 Dozen

    8 oz Cream cheese; softened
    1/2 c Sour cream
    1/4 c Picante sauce
    2 tb Taco seasoning
    ds Garlic powder
    4 1/2 oz Can chopped ripe olives;
    - drained
    4 oz Can chopped green chilies
    1 c Fine shredded Cheddar
    - cheese
    1/2 c Thin sliced green onions
    8 Flour tortillas (10");
    - warmed
    Salsa

    In a small bowl, beat cream cheese, sour cream, picante
    sauce, taco seasoning and garlic powder until smooth.
    Stir in olives, chiles, cheese and green onion. Spread
    about 1/2 cup on each tortilla.

    Roll up jelly-roll style; cover and refrigerate for 2
    hours or overnight. Slice into 1" pieces. Serve with
    salsa.
