    Title: Citrus Cod
    Categories: Seafood, Vegetables, Citrus, Herbs
    Yield: 4 servings

    4 Cod fillets (4 oz ea)
    2 tb Butter
    1/2 c Chopped onion
    1 cl Garlic; minced
    1 ts Grated orange zest
    1/3 c Orange juice
    1 tb Lemon juice
    1/8 ts Pepper
    1 tb Minced fresh parsley

    Set oven @ 375ºF/190ºC.

    Place fillets in an 11 X 7" baking dish coated with
    cooking spray.

    In a skillet, heat butter over medium-high heat; saute
    onion and garlic until tender. Spoon over fish. Mix
    orange zest and citrus juices; drizzle over fish.

    Bake, uncovered, until fish just begins to flake easily
    with a fork, 15-20 minutes. Sprinkle with pepper and
    parsley.

    Title: Chicken Bog
    Categories: Poultry, Rice, Vegetables, Pork
    Yield: 6 servings

    1 tb Oil
    1 md Onion; chopped
    8 oz Smoked sausage; halved, in
    1/2 " slices
    3 cl Garlic; minced
    5 c Chicken broth; divided
    2 c Uncooked converted rice
    1 ts Salt
    1 ts Pepper
    3 lb Rotisserie chicken; meat
    - removed and shredded
    Thin sliced green onions;
    - opt
    Hot sauce

    In a large skillet, heat oil over medium heat. Add onion
    and sausage; cook until sausage is lightly browned. Add
    garlic and cook 1 minute longer; transfer to a 5 qt.
    slow cooker.

    Stir in 4 cups broth, rice, salt and pepper. Cook,
    covered, on low until rice is tender, 4-5 hours. Stir in
    chicken and remaining broth. Cook, covered, on low until
    chicken is heated through, about 30 minutes. If desired,
    sprinkle with green onions. Serve with hot sauce.
